Why can't Christians understand these crystal clear quotes of Jesus from the Bible, what is so difficult?

Considering the Bible is interpretation to most, people don't take pages literally, but rather as metaphors. So for example, someone may believe a cow in a pasture is actually a metaphor for the end of the world, and another person may think it a metaphor for not eating celery on tuesdays. Unless the Bible is taken literally (which it is not), then it means completely different things to different people.
